Cultivation:

It is widely grown in the Southern parts of India. Kerala and Karnataka are the major hubs for the cultivation of Matta rice. Dense Black cotton soil is used for the cultivation. This special type of soil is found in Palakkad, Kerala. Matta rice has special flavor and taste due to its soil variety. It contains clay and slit.

Recipe: 

 Lemon  Matta rice 

Preparation time: 30 minutes

Cooking time: 15  minutes

 Ingredients: 

  1. Kerala Rice – 2 cups [Boiled] 
  2. Lemon Juice – 3 tbsp 
  3. Ground nut – ¼ cup [Roasted & peeled] 
  4. Sambar onion – 4 [chopped] 
  5. Green Chilli – 1 [slit] 
  6. Dry red chilli – 1 
  7. Turmeric powder – 1 tsp 
  8. Curry leaves – 1 spring 
  9. Mustard seed – 1 tbsp 
  10. Bengal gram – 3 tbsp 
  11. Urad Dal – 1 tbsp 
  12. Peppercorn – 1 tbsp 
  13. Asafetida – 1 tsp 
  14. Gingelly oil – 1 tbsp 
  15. Oil – 2 tbsp 
  16. Salt to taste 

Preparation  

  1. First boil the matta rice for 15 mins.  
  2. Then heat the oil in a pan 
  3. Add mustard seeds. 
  4. Then include Bengal gram, urad Dal and Peppercorns.  
  5. Add onion and saute it softly 
  6. Next add green as well as red chili, asafoetida, turmeric powder.  
  7. After mixing it well next add roasted groundnuts and curry leaves.  
  8. Add the boiled rice. 
  9. Add salt and lemon juice.  
  10. The last step is to add gingelly oil and mix it well 
  11. Finally, your delicious lemon matta rice is ready to serve.
