Preparation of brinjal capsicum poriyal also takes 15-20 minutes.

Ingredients needed are:

  • Brinjal – 2
  • Capsicum – 1
  • Asafetida Powder – a pinch
  • Coriander leaves – few
  • Black Pepper – 1 teaspoon
  • Cumin seeds – 1/2 teaspoon
  • Curry Leaves – few
  • Turmeric Powder – a pinch
  • Coconut gratings – 3 tablespoons (Optional)
  • Coriander Seeds – 1 tablespoon
  • Oil 2 teaspoons
  • Mustard – 1/2 teaspoon
  • Red Chilies – 1
  • Green Chilly – 2
  • Salt –  as per taste

Preparation of Brinjal capsicum poriyal:

A) For spices ,take a pan, put red chilies, coriander seeds, pepper, cumin seeds and curry leaves and dry fry it separately.

B) When it is cool, put all the fried items in a grinder and grind it coarsely.

C) Dice brinjal and capsicum into small pieces.

D) Take a pan, put one tablespoon oil and heat it.  When it is hot, add mustard.

E) When it starts pop up add cumin, asafetida powder, red and green chili and curry leaves.

F) Add diced vegetables with turmeric powder and salt in it.

G) Add little water.   and cook till the vegetables are soft.

H) Now add two to three teaspoons of the spice powder we made and mix well.  Finally, add coriander leaves and coconut gratings and stir once again and remove from cooktop.
